Skye Niseko - Kumo Restaurant Sushi Chef: ¥5.0m - 6.0m
We are looking for an experienced and skilled Sushi Chef to join our 220 seat Kumo Restaurant in Skye Niseko Hotel.
Your knowledge of japanese cuisine and sushi techniques are necessary for creating an impressive sushi menu to support the Head Chef in day to day operations.
Starting Date: June (flexible)
The Role
- Creating sushi menus with a variety of fish and vegetables
- Daily operations of the sushi/sashimi orders
- Sourcing and negotiating supply of quality seafood and produce
- Train and supervise other chefs with fish handling and sushi making techniques
- Reviewing and managing inventory requirements
- Reporting to the Head Chef at Kumo
Knowledge and Skill Requirements
- Previous/current experience in restaurant as Sushi Chef
- Sashimi, maki, temaki and nigiri experience needed
- Language skills: Min business level Japanese required, Conversational English an advantage
- Punctual and on time for shifts
- Ability to work in a fast paced environment
- Team-worker with ability to work under pressure
- Attention to detail
Employment Package Details
Employment Period and Status: Ongoing full-time contract
Contract Value: ¥5,000,000 to ¥6,000,000 (depending on skills and experience)
Location: Niseko, Hokkaido, Japan
Working Hours:
- Average 40 hours per week (shift times vary by season)
- 120 days off per year
- Sick leave: 5 days
- Annual paid leave: 10days (after 6 months of employment)
