Our busy production kitchen, FoodWork, needs an organised and skillful Head Chef who will be in charge of the set-up and daily operations in our purpose built production kitchen which supports restaurant and cafe operations in the nearby Niseko Hirafu Ski Resort.

Located in central Kutchan town, FoodWork operates year round to:

  • Support 2 busy hotel restaurants in Niseko-Hirafu Ski Resort
  • Provide daily bread, sandwich and take out food items for a hotel Cafe / Deli
  • Operate as a wholesale and supply bakery
  • Prepare frozen and packaged meals and goods for sale through hotels and other retail outlets.

This is an integral role to HTM's F&B and will be the backbone of the product that we deliver.

You will bring the knowledge, experience and drive to the role which leads a year round and seasonal team of chefs and kitchen staff. You will report to the the F&B manager for HTM and work closely with the Head Chefs of Kumo and An Dining restaurants.

The Role

  • Daily food production management for Kumo, An Dining and Skye Niseko Deli
  • Purchase and receive from suppliers
  • Operation and cost communication with restaurants
  • Manage the production kitchen food cost
  • Stocktake operations
  • Inventory and product loss
  • Manage staff rosters and labour cost
  • Invoice management
  • Upkeep sanitation and safety standards
  • Supervise, mentor and manage a team of chefs and kitchen staff of up to 12 staff depending on the season.
  • Work closely with the Restaurant Head Chefs in menu and production methods/systems
  • Ensure consistent delivery of product made to recipe and delivered on time
  • Ensure compliance with all applicable food safety and hygiene standards

Knowledge and Skill Requirements

  • Over 4 years’ experience, including experience leading a busy kitchen with multiple staff
  • Large hotel experience desirable
  • Baking skills or experience desirable
  • Language skills: Minimum Japanese conversational and minimum conversational English needed
  • Computer skills: Microsoft Office, PMS, POS
  • Valid driving license
  • Professional, courteous and friendly manner
  • Natural team-leader with proven experience solving problems in a team environment
  • Understanding of supply procurement, able to to secure value for money and consistent quality of produce
  • Strong attention to detail and ability to organise work and team to achieve objectives and deadlines

Employment Package Details

Employment Period: Ongoing

Employment Status: Full time year round

Contract Value: ¥6,000,000 to ¥6,600,000
(The above remuneration will be divided by 14 and paid monthly with two annual bonuses.)

Location: Central Kutchan town, Hokkaido, Japan (Niseko Resort)

Working Hours: Average 40 hours per week (shifts vary by season)
